Below is the complete list of all 16 UO Skills in the game. Each character (except for one) has a set of 3 specific UO Skills. Some characters begin with only 1 skill and will earn the other 2 skills as the story unfolds during play. By performing specific actions in the game a "skill gain check" will be calculated. If successful the skill will increase by +1. Each skill has a maximum of 1000. Your current skill levels can be checked at any Save Point. The higher the skill becomes the harder it is to gain.

13 of the skills are taken directly from Ultima Online. The other 3 are indirectly taken from the game. Cannibalism is taken from the different levels of hunger in UO. Gambling is taken from the luck property and use of dice in UO. And Disguising is taken from one of my favorite items in UO, the disguise kit.

Each skill is unique to each character except for Magery & Meditation which are used by the two mages in the game.

Blacksmithy
Brief Description: Once you gain your first 100 points of skill you'll be able to craft Swords, Krysses, Plate Helms and Plate Armor. Each of these will be made of the ingots used to craft them and retain their maker's mark. The type of metal affects the strength of the blade and special properties unique to the metal. Each Sword is also randomly given 1 of 7 Super Slayer properties. At 500 Blacksmithy you'll be able to smith Shurikens as well.
Gaining Skill: You must have your Blacksmith in your party, be standing next to an anvil, and have a Smith's Hammer in your inventory. Through the skill menu you will get a skill gain check every time you successfully craft an item.
Carnnibalism
Brief Description: Through events that occur in-game, you eventually learn the skill Cannibalism -- the art of eating human flesh. As your Cannibalism skill increases, the more eating techniques you'll learn. The amount you can eat (and how often you can use your skill) is based on your Hunger Level. There are 5 different stages of hunger: (1) Very Hungery, (2) Somewhat Hungry, (3) Somewhat Full, (4) Very Full, and (5) Completely Stuffed. Each time you use a skill, you become less hungry. When you reach Completely Stuffed, you will no longer be able to use your skills (with the exception of Endless Hunger). Much like passive meditation, you'll naturally become more and more hungry outside of battle.
Gaining Skill: Every time you use a Cannibalism skill during battle, a skill gain check is performed.
Chivalry
Brief Description: Chivalry is used by Paladins through the skill menu. Each spell requires both the appropriate amount of mana and Tithing points to cast. Your amount of Tithing is paid in tribute at shrines by giving gold to the shrines.
Gaining Skill: Each time a Chivalry spell is used a skill gain check is performed.
Disguise Kit
Brief Description: Once you receive a Disguise Kit (item) you'll have access to the Disguise Kit skill. You'll be able to change into various different disguises once you find new outfits. Other people may respond and act toward you differently depending on which outfit you're wearing.
Gaining Skill: Everytime you change into or out of an outfit, a skill gain check is performed.
Fishing
Brief Description: While standing in the center of a Bottomless Pond or on a ship, you can use your Fishing Pole. You have a 1% chance of pulling up each of the different sandals, 2% chance of pulling out a rare fish, 10% of getting a Fishing Net, 1% of getting a Sea Serpent, and the remainder will get you normal fish. When you throw a Fishing Net into the pond, you'll get either 100, 200, or 300 gold. Then you'll have a 1 in 3 chance for rare gems, 1 in 4 chance for scrolls, 1 in 20 chance for wands, and 1 in 100 chance for each of the 60 weapons & 81 armor pieces. You also get a 1 in 2 chance of another Fishing Net -- repeating the process.
Gaining Skill: Every time you use your Fishing Pole or a Fishing Net, a skill gain check is performed.
Focus
Brief Description: All characters have a "passive meditation rate” gaining 1 mana every 7 second when not in combat. Characters with Focus gain an extra mana every 7 seconds for every 200 points of Focus for a total of 6 mana every 7 seconds at Grandmaster Focus. In addition, they will also get a permanent +10 DEX for every 100 points.
Gaining Skill: Every time mana is gained this way, a skill gain check is performed.
Gambling
Brief Description: The higher the skill in Gambling, the better the odds of drawing a more powerful Tarot Card or rolling a Snake Eyes with Dice. With higher skill in Gambling comes the randomness getting tipped in your favor.
Gaining Skill: Every time you use Tarot Cards or Dice in battle, a skill gain check is performed.
Healing
Brief Description: Each time this skill is used requires the use of 1 Bandage. Initially it heals very little hit points. But in addition to not requiring any mana to use, they also strengthen as your Healing skill increases. At 600 skill you gain the ability to cure Lesser Poison. At 700 you can cure Poison, at 800 you can cure Greater Poison and at 900 you can cure Deadly Poison. At 800 skill you will also gain the ability to resurrect a party member at the cost of a 2gp Bandage.
Gaining Skill: Every time a Bandage is used, a skill gain check is performed.
Hiding
Brief Description: Hiding may be activated voluntarily through the skill menu. When hidden you will be harder to see, but not impossible. This will also toggle on and off random encounters whenever it is used.
Gaining Skill: Every time the Hiding skill is used to hide or unhide, a skill gain check is performed.
Inscription
Brief Description: To scribe a spell you must have a character with Inscription in your party. They must be able to cast the spell you with to scribe, must have the necessary reagents for the particular spell you select, and you must have a Blank Scroll in your backpack. Only 8 of the 64 magery spells are available to craft through Inscription. (One from each circle.) At Grandmaster Inscription you get +100 INT. Scribes can also craft spellbooks at the cost of 10 Blank Scrolls. Spellbooks spawn randomly with the properties INT +5, MR1, and LRC 1% - 12%. There are a total of 51 different craftable spellbooks.
Gaining Skill: Every time you successfully scribe a spell or craft a spellbook, a skill gain check is performed.
Lockpicking
Brief Description: The higher the skill in Lockpicking, the higher chance you will have at picking a lock. Locks can be found on doors, chests, and other miscellanous objects throughout the game.
Gaining Skill: Every time you attempt to pick a lock (success or fail), a skill gain check is performed.
Magery
Brief Description: A total of 64 magery spells being cast by different mages during the game. The 64 spells are broken down into 8 "circles." Each circle contains 8 spells each. Once a character with Magery reaches a specific skill level, they will gain the next 8 spells of the next circle. Also there are 8 different reagents. A different combination of either 1, 2, 3, or 4 reagents are needed to cast each specific spell. The game will check if the necessary reagents are in your inventory, consuming one of each if the spell is cast, and disabling the spells individually if you do not have the necessary reagents.
Gaining Skill: Every time mage casts a spell, a skill gain check is performed.
Meditation
Brief Description: All characters have a "passive meditation rate” gaining 1 mana every 7 second when not in combat. Characters will Meditation will gain an extra 1 mana every 7 seconds for every 100 points of Meditation. For a total of 11 mana per 7 seconds at Grandmaster Meditation.
Gaining Skill: Every time they gain a point of mana is gained this way, a skill gain check is performed.
Mining
Brief Description: If your blacksmith is in your party, if they have a Pickaxe equip and if they are standing on a specific tile near the walls of a cave you can begin to mine. At normal mining locations, with each strike you will have a 90% chance of pulling out a piece of ore. You will gain the ability to mine additional types of ore every 110 skill, with a total of 9 different type of ore. You also have a 2% chance of breaking your Pickaxe. You'll have to smelt the ore to ingots at a forge to produce anything useful.
Gaining Skill: Every time you mine a piece of ore a skill gain check is performed. Every time you smelt a pile of ore a skill gain check is performed.
Poisoning
Brief Description: By using a poisonous potion you will be able to apply the poison to Fishsteaks, Shurikens and Krysses. You will naturally have to ability to apply Lesser Poison, have a 1% chance of poisoning yourself in the process. At 250 skill you will be able to apply Poison with a 3% chance of poisoning yourself. At 500 Greater Poison with a 5% chance. And Deadly Poison with a 10% chance at Grandmaster Poisoning.
Gaining Skill: Each time poison is successfully applied to an item, each time a shuriken is thrown, and each time you take a poisoned weapon into battle, a skill gain check is performed.
Tinkering
Brief Description: Tinkering can be used through the skill menu as long as you have Tinker's Tools in your backpack. You will have the choice of crafting keys, pickaxes, smith's hammers, tinker's tools, fishing rods, scissors, scribe's pens, and lockpicks. Tinkers also have the ability to create a Golem at the cost of 50 Iron Ingots, 50 Bronze Ingots, a Clockwork Assembly, and a Powerstone. The ingots are found through normal mining. The Clockwork Assemblies & Powerstones must both be found as loot from chests or monsters. How well you craft the Golem (and how high its stats are), are completely dependant on your skill in Tinkering. A Golem will only be created if you have 3 or less party members and will be destroyed if a 4th member joins the group. You can also repair your golem at the cost of Iron Ingots.
Gaining Skill: Every time you successfully craft an item, craft a golem, and for every single Iron Ingot used in a repair, a skill gain check is performed.
